KING OYSTER MUSHROOM CHICKEN BREAST ROLL
Ingredients
- 200g King Oyster Mushroom (rinsed and wiped dry)
- 400g Chicken breast meat
- 100g Long beans (rinsed)
Seasoning
- 1 Tsp TAN SRI ONG P90 Blend of Palm Olein & Olive Oil
- 1 pinch Salt
- Light soy sauce, freshly ground black pepper and toasted sesame to taste.
Method
- Slice the rinsed king oyster mushroom lengthwise into long thin slices (thickness: approx. 3mm).
- Cut the rinsed long beans into 1-inch strips.
- Add sliced king oyster mushrooms into a pot of boiling water, cook for 2 minutes or until mushrooms have soften, remove and set aside.
- Add the cut long beans into the same pot of boiling water, cook for 2 minutes or until cooked through, remove and set aside.
- Slice the chicken breasts meat into long thin slices, add in salt and light soy sauce, mix and marinate for 10 minutes.
- Layer the ingredients as follows: start with king oyster mushroom slice, follow by the chicken slice on top, and finally the long bean strips.
- Roll them together and secure with a toothpick.
- Heat TAN SRI ONG P90 Blend of Palm Olein & Olive Oil in a non-stick pan, add in the king oyster mushroom chicken breast roll, fry over medium heat until the king oyster mushroom is golden brown and the chicken breasts turned white.
- Dish and up and serve with a sprinkle of toasted sesame and freshly ground black pepper.
