EGG, SPINACH AND TOMATO ON TOAST

Ingredients

    • 1 Tsp TAN SRI ONG P90 Blend of Palm Olein & Olive Oil
    • 2 Cloves Garlic (sliced)
    • 120g Ripe cherry tomatoes (halved)
    • 50g Spinach (rinsed)
    • 2 Slices Toasted whole grain bread
    • 1 Egg

Seasoning

  • ¼ Tsp Chili Flakes
  • Salt and black pepper to taste

Method

  • In a small skillet, heat 1 tsp of TAN SRI ONG P90 Blend of Palm Olein & Olive Oil, then add garlic and sauté until aromatic.
  • Once garlic has browned, add salt, black pepper and chili flakes.
  • Add cherry tomatoes and mix to combine. Crush the cherry tomatoes while sauteing.
  • Cover and simmer for 2 minutes. Add in rinsed spinach.
  • Crack an egg on the sauce. Sprinkle some salt and black pepper.
  • Cover and cook over low heat for about 4 minutes or until egg whites have set but yolk is still runny.
  • Serve with toasted whole grain bread.
