EGG, SPINACH AND TOMATO ON TOAST
Ingredients

- 1 Tsp TAN SRI ONG P90 Blend of Palm Olein & Olive Oil
- 2 Cloves Garlic (sliced)
- 120g Ripe cherry tomatoes (halved)
- 50g Spinach (rinsed)
- 2 Slices Toasted whole grain bread
- 1 Egg
Seasoning
- ¼ Tsp Chili Flakes
- Salt and black pepper to taste
Method
- In a small skillet, heat 1 tsp of TAN SRI ONG P90 Blend of Palm Olein & Olive Oil, then add garlic and sauté until aromatic.
- Once garlic has browned, add salt, black pepper and chili flakes.
- Add cherry tomatoes and mix to combine. Crush the cherry tomatoes while sauteing.
- Cover and simmer for 2 minutes. Add in rinsed spinach.
- Crack an egg on the sauce. Sprinkle some salt and black pepper.
- Cover and cook over low heat for about 4 minutes or until egg whites have set but yolk is still runny.
- Serve with toasted whole grain bread.
